Red Russian is actually Siberian Kale and a fantastic cultural heritage from 1863. However, the variety is considered a rarer “kale plant” due to its appearance. The decorative leaves are matte green with violet hints from the veins and stems. The variety is fast-growing and can withstand the winter even in our northern latitudes, which is one of many reasons why it has become so popular. It is most delicious after the first frost and can also be frozen when needed. It is excellent for making chips with olive oil, crushed garlic, and salt or fresh in salads because the taste is a bit spinach-like. It is incredibly vitamin-rich and can be cooked in any way that regular classic kale can.
In addition to its delightful taste, Red Russian is also incredibly decorative in plantings. So if you are looking for a beautiful kale that can adorn your flower beds but also create a wonderful dimension in cooking, Red Russian is a variety that will take you by storm.
